We are using it for livestock movement and disease mapping - not to any great level of sophistication, but 
* partly because we are comfortable with R and being able to use it to create really nice dynamic graphs during web page generation without having to learn any new techniques is brilliant, and
* partly because for any modelling most databases suck at probability distributions, and with PL/R it is ridiculously easy to get a distribution when you want one.
